Restaurant cooks have a new opportunity to rise to the top. Chef de Cuisine has been designated as a trade by the Industry Training and Apprenticeship Commission (ITAC). Kerry Jothen, chief executive officer of ITAC, credited the Canadian Federation of Chef and Cooks (CFCC) for its role in the new designation. The CFCC has been offering the Chef de Cuisine training and certification to its members through its education unit, the Canadian Culinary Institute (CCI). "This is an important step in officially recognizing the qualifications of professional cooks who want to advance in their industry in B.C.," he said. "This is great news for CFCC members," said James Kennedy, CCI chair with the CFCC. "The Chef de Cuisine program has already been implemented in our industry and the new designation will further professionalize our workforce. Our industry encourages its workers to gain additional skills and training."
