| Zinfandel Poached Pears Serves 8 |

Ripe Pears, (peeled, cored and halved) Zinfandel Water Honey Sugar Star Anise (broken) Sliced dry Apricots Whip Cream (lightly whipped) |

Combine the Zinfandel, water, honey, sugar and star anise in a pot. Bring to a
simmer. Add the prepared pear halves and gently poach for 30-40 minutes. Remove pears and strain poaching liquid over the sliced apricots. Allow to sit for ten minutes. Remove apricots and return the liquid to a pot over medium heat. Cook liquid to reduce by ¾ to make sauce. When sauce is cool serve a ½ pear, apricot slices and whipped cream arranged on a plate. |
