Zinfandel Poached Pears

Ripe Pears, (peeled, cored and halved)
Zinfandel
Water
Honey
Sugar
Star Anise (broken)
Sliced dry Apricots
Whip Cream (lightly whipped)

Combine the Zinfandel, water, honey, sugar and star anise in a pot. Bring to a simmer.
Add the prepared pear halves and gently poach for 30-40 minutes.
Remove pears and strain poaching liquid over the sliced apricots. Allow to sit for ten minutes.
Remove apricots and return the liquid to a pot over medium heat.
Cook liquid to reduce by ¾ to make sauce.
When sauce is cool serve a ½ pear, apricot slices and whipped cream arranged on a plate.
